Sealing up Baltic birch

I have a bunch of Baltic birch pieces I cut out for the interior of a vw bus. What would be best for finishing it and sealing it up? I really just want a matte or minimal gloss bumper on the natural side, not really looking to add a bunch of color. Preserving the wood is my biggest concern. If a product is available from one of the big box stores it would really make it easy for me.
