Will I still be able to fight the fourth boss after finishing the old hearts ?

So Ik there are 4 hearts in total and that conjoined heart can replace one of the three hearts, but I was wondering if you could still fight one of the three bosses after doing the evebloom thing etc... Bc I I prefer the clover dancers than ony other boss but I don't want to lock one of the fights.
