I have become the lord of achievements

This is a recurring problem that has occurred to me since I platinumed GoW III, 2018; Cuphead and Dark Souls I. It turns out that whenever I play something new, regardless of whether I finish it or not, I look at the achievements and try to complete them all. This is a negative more than a positive because I love Hoi4, I have played almost 1000 hours and I have achieved several difficult achievements such as the Tour de France or conquering France with Carlist Spain. Although that's exactly where the problem lies. I've been (rounding up) a thousand hours in the game and I feel like I know little or nothing about it. To enjoy myself for a while, I started playing Portal 1 and Portal 2 during exam season and I almost went platinum with the first one (I was three achievements away) and I didn't try the second one because I just had a Multivariable Calculus exam. Right now I would like to enjoy mods like Kaiserreich/Kaiserredux but my more or less skill in the vanilla game means that I don't feel like playing (although I really do). What would you recommend I do?
