Steering wheel set up?!?

So I’m looking to run a MOMO prototipo BUT… I am stuck whether I get a 320mm or a 350mm. I know stock is 370mm I’m 5”10 and quite enjoy the stock wheel BUT I do have a hard time getting in because of my knees I have PS so smaller wheels don’t scare me lol also quick release or no? I have a 1991 so No airbag ANYWAYS🥲 what do you guys recommend!?!
