Butternut Squash as a Main for Vegan Thanksgiving Guest - Recipe Request!

I have a Thanksgiving Day guest who is vegan and while I will be making the traditional fare, I wanted to make sure that I have a main course that is substantial enough for them with a hope of wowing them as well! As they love butternut squash, I wanted to have a main that would have the ability to be filling and complement the traditional table. I have been researching recipes for inspo, but haven't found one that fits the bill as just about every recipe is a side or too sweet. So I turn to you dear cooks, please help out a soul who has hit a dead end on the recipe search!
