What’s a dish that lives rent free in your head?

We all have one! Mine is the agnolotti pasta from Neptune’s grotto (the texture ahh) and the perfect savoury/sweet combination for a dessert dish at ormeggio a number of years ago (fennel, rice and green apple/caramel but somehow the flavour combo was so on point?!)
