Mac MINI M4- what do I need for 2 external Monitors and a good keyboard/mouse

Bought my 1st Mac Mini yesterday and thanks to the community for helping me get BB to price match micro center. Q- I have 2 external Monitors that have HDMI connections. What will I need so that I have 2 separate screens? I love the TOUCH ID on my MacBook. What keyboard/mouse do you suggest? The Apple products look expensive. I don’t mind paying a premium price as long as it worlds great and has Touch ID. Q- any speaker suggestions? This is low on my list but curious.
