Help creating a "Dancing Shrimp" tank at my home.

I want fresh food and I remember dancing shrimp in Thailand, they were awesome! Does anyone have any recommendations on how to keep these things in tanks? What do u feed? I'm looking at Caridina species like cherry shrimp.

I'd appreciate any help since this is not a thing in the west.
