New homelab pc/server

I'm currently wanting to buy a new homelab pc. currently my setup is only my qnap nas.
But this is not great for running dockers and such. And I rather have a VM that i can play around in.
It will be running proxmox and various vm for webhosting testing, dockers, some game servers and some more things.

But what to buy, there is a change i can buy a lenovo p620+ with a treadripper pro 3995wx and 256gb of ram or a lenovo p620 with dual xeon golds 6154 and 192gb of ram. (both will be around a 1000€ to 1300€)
Or just buy an am4 or am5 board and keep it simple. With an 6 or 8 core cpu and 32/64gb of ram and a couple of nic in it.

Power usage is not yet a problem due to our regulations, but those will change due to our goverment getting rid our solar benefits.
I'm a bit doubting about what to do, i know the lenovo's probally gonna be overkill
