First time roasting chicken. need tips for better skin
Hello, I am not an avid Reddit user so forgive me if my reddiquette is improper but I was wondering what went wrong with my chicken. I had tried making my own recipe for oven roasted chicken. The skin came out chewy and tough, not leathery but almost like thin paper I guess. It was a very weird texture
I rubbed the seasoning on my 6 pound chicken 24-hours before the oven roasting. Leaving covered in the fridge overnight.
Next day I took it out put some butter underneath the skin put a last coat of seasoning (garlic powder, onion powder, tony creole seasoning, paprika, dill, black pepper, msg) on the top half of the chicken and garlic cloves around and in the cavity of the chicken.
It was in the oven for 3.25 hours at about 250 leaving the chicken at about 150 internally climbing to 156 after about 5 minutes of resting in the oven.
The skin came out as described in the first part of this post. any idea of what could have went wrong?
I must add that I am very new to cooking myself I really just go off why knowledge YouTube videos and what I’ve heard throughout the years, so any advice no matter how simple is appreciated 🙏
