Is Building with 1x16gb DDR5 Fine for Now?

Basically we all know the crazy RAM prices right now. Would it be reasonable to build with 16gb of ddr5 ram with a 7800x3d and 5070 ti and wait for a little to buy the second stick if I want to have a build done for christmas? Will it still run intensive games like cyberpunk and ghost of Tsushima, elden ring, etc. What will major limitations be? Thank you!
