Aniyomi and some questions

Hello I'm pretty new to Aniyomi and looking at extensions and suggestions through the internet ive found animepahe and hianime to be probably the best. Alot of people were saying allanime is a good source but issue is, none of it seems to have available subtitles or dubs? Im fine with sub if it actually has subtitles but it doesn't seem allanime does even though its highly recommended throughout reddit.

And yes in the settings for anime audio and subtitles I put preferred as (eng, en). I was also curious about another thing some anime have multiple audio track options of different sizes, I was wondering what the difference is (SS attached shows this) theres no language difference and I cant hear any normal audio difference.

Another thing is "preferred video server" judging by the SS it seems to just be different video formats, was wondering if I should change to any of them and which would be best for Aniyomi

Last thing, if anyone has any anime source suggestions id be more then happy to have them! I dont have a preference of settings as long as it has a way for me to understand (japanese with eng subtitles or english). Manga sources would also be welcomed, although I think i have plenty of those.
