What to add to ice cream bites :)?

I want to make those little fruit ice cream bites that people sell, I'm not sure what they r exactly called, I think bing chilling ice cream bites, something like that lol. But I have some molds and I wanna make something similar. I wanna make it crunchy when I bite it but the inside to be soft. What can I use to make the outside crunchy, and what should I fill it up other than ice cream to make them delicious?
