Allergy vs disease
I have celiac disease, and was diagnosed at 10 months old with a biopsy of my intestine, which showed I did NOT have the enzyme to digest gluten. So, it gets frustrating when I hear people, most people, call it an allergy, or your allergic to bread. It's so much more than that. And it really needs to be researched more. The fact that cross contamination is so expected and over looked, but it can really cause harm those who truly have celiac. Who have gotten the biopsy and actually know they don't have the enzyme. The blood test is so inconclusive and gives people the wrong idea about the disease. Gluten sensitivity and intolerance don't really make any sense to me. And to be diagnosed with celiac, through a blood test, at 60 or 70 years old, is really impossible, considering you have to have been born without the enzyme. And to live that long with celiac and NOT know, would cause starvation and malnourishment. So, I just wish there was more studies and research, because, speaking from someone who has celiac 100% and this world is so oblivious to the problems, it would really help those of us who really cannot handle cross contamination, not even the slightest. Just kind of a little rant, to maybe get more people talking. (I have been blocked from the celiac thread and not sure why, so I wanted to post it somewhere)
