Nakiri needs.. have three candidates.
I want to expand my Nakiri collection, and perhaps pick up a few unique blades that suit my cooking style (heavy French focus, lots of mirepoix processing). I have struggled with Nakiris in the past, I was never happy with how they handled onions - that is likely user error, but I tended to grab a petty to help process an onion or shallot - I'd rather not have to grab a second knife if I can avoid it. For some reason, I dont have this same issue with my Chinese cleavers - the more square angle at the tip seems to get my onion jobs done - the (softer?) tip of a Nakiri has left me wanting. Again, this is my poor knife skills I am sure, but - its kept me from grabbing Nakiris as often as I would like.
So after having a bit too much wine, I find myself shopping for Nakiris. I am hoping for comments on the following ideas.
Nigara Hamono AS Migaki Tsuchime Kiritsuke Nakiri 180mm
Stunning knife with a very unique shape. I struggle with traditional shaped Nakiri's, they are not well suited (at least with my basic skills) for onion cutting, lacking a pointy tip. This seems to solve that issue nicely, and the shape is gorgeous.
Nigara SG STRIX Nakiri 180mm Ebony Handle
Very interesting shape, again, and a steel that I do not have in my collection. Its quite a bit more expensive than my usual limit for non-unicorn knives ($380), but looks sooo pretty.
