Air dry clay

I have never done pottery, so I bought DAS modelling clay to start making stuff at home. Question: is there any difference between air dry clay and ceramic/pottery clay? Like if I'm planning to make a jewelry dish using the DAS clay, why wouldn't I just use pottery clay if nothing is being fired?
