Should I still be doing interviews after accepting a job offer?

I have accepted a job offer with great base/TC. The jobs I am interviewing for have similar / a little less base/TC. These interviews are multiple rounds with varying technical / behavioral questions. Some say the practice and exposure is worth doing it, but I would like to ask others on their opinions and if anyone has been in a similar situation?
