How does applepay works

Hello everyone I have a question, how does Apple Pay work, for example let say I’m using my apple wallet to pay for ads and apple gave the ad company the virtual card they created and let say later, the company decided to charge my card again, can they update the old transaction amount or will they have to make a new payment amount?
