5800x - 3080 Upgrade Advice

Hello! I was searching around for an upgrade for my rig. After being out of the loop for a while, I was seeking some advice.

RTX 3080

Ryzen 7 5800x

64Gb DDR4

1440p monitor

As far as the workload, I am typically on either on Tarkov or EVE Online (multiboxing ~10 toons). I also work in Blender and Sony Vegas Pro a fair bit. All in all, it's a fair bit of gaming with some 3D work and video editing mixed in.

I've had good luck with the MSI cards and can buy a 5070ti Ventus 3x for $800 or a 5070ti Shadow 3x for $750 locally. The CPU bottleneck worries me a bit though. Has anyone made the upgrade to a 5070ti running with a 5800x?

I could always upgrade the processor/mb instead but I feel like the GPU needs it more than anything.
