I’ve heard all the “get a few great knives instead of a set” advice, sooo what now?

Thank you for your patience as I know this question has been asked and answered multiple times, but now I’m just bogged down by info. I want to buy my husband a 6 or 8 inch chefs, knife, and paring knife with the budget of $200-$250 I want something that both looks and feels nice and will last him a long time with proper sharpening. I don’t know anything about this except for what you wonderful people have all said previously, so thank you in advance and happy holidays!
