Help determining some options

Hi all! I’m currently a stay at home mom. I’m considering returning to college to finish a bachelors degree. This would be more for the accomplishment than for any career path. Grew up in a very much blue collar family & area but I am married to a very educated family and would like to set a good example for our child. After being out of school for over 10+ years I must say I find this quite intimidating.

What are some degree options with very minimal math? (lol) & also, any online degrees and schools that are “easy”? I’m not saying this for any easy way out or anything. I genuinely want the accomplishment but I do want it to remain feeling attainable and not something I will feel like I’m set up to fail. I have a very attached baby and my availability is limited. This may be something that happens soon (ish) but not necessarily due to my limited availability. I’ll determine that a bit later.
