Question about wages not paid

I don’t wanna go into it much. I just want to say that I’ve worked in Utah and I found out I haven’t been played overtime for over a year I have all my pay stubs to prove it. Do I bring it up to my employer question and demand the money or file a claim wage dispute or whatever with the state? I’ve never been in this situation. And before you ask me, how did I not notice because my checks were equivalent to my old job previously and so I didn’t see my stubs and the employer was investigated this year for a wage claim after that, I decided to check and that’s when I found it out. Some advice would help!
