Budget & family-friendly Caribbean resort recs

Anyone have a rec for a budget & family-friendly resort--we're thinking PR or DR but open to anything in Caribbean with a beach--for a couple of NYC parents that have traditionally hated resorts? We have a 1yo and a 5yo and are needing to adjust how we travel now that we have two kiddos! We used to lead a life of adventure and now we are...tired. Willing to rent a car and drive 2-3 hours from airport if needed. I would appreciate the wisdom of the NYC parent hive mind - TIA!
