What is the point of choosing a path?

If doing one path first will get you absurdly overleveled for the other two?

Honestly these games are great but they manage terribly this aspect, once you progress a little bit on a main quest, the rest will be stupidly easy in terms of gameplay. Any recommendations? Should I play the 3 paths at the same time trying to balance the level all the time?
