Off shore trip

I want to fly in from Jersey with my old man for a long weekend to do some fishing in Jan/Feb. Visited many times never fished. Looking for bigger fishing to make the trip feel more worthwhile for him sail fish tuna type fishing. But his favorite eating fish is mahi so if they’re in the area during this time that would probably take priority. Looking for recommendations on east coast/west coast or the keys. I want to travel light so assume this will all be charter fishing with in house gear
