Open world games that aren’t too hard or scary.

I’m very new to gaming on the PS5 (only had a switch previously) and loved Ghosts of Tsushima it’s been my favourite game so far. I played it on easy as I’m not very good with PlayStation controls yet and I don’t like being too scared during combat! I just finished Ghost of Yoyei and although i didn’t like it quite as much as GOT I really loved the fact i could select a level that wasn’t too hard for me, it was open world and I can have days where I avoided too much combat and just followed myths and other stories or explored. Are there any games that you’d recommend that feel the same? After researching I saw people recommending RDR2 and while I can see similarities it’s just too difficult for me to get very far with it, I feel like I don’t really know what I’m doing and I can’t really get the hang of shooting. Would love to hear your recommendations.
