GI issues after contracting GHSV1

Discussion

TL:DR - contracted GHSV1 in August, GI issues ever since (weird burning sensation in stomach that is not acid related, nervous system feels shot, increased anxiety, intolerance to foods which were fine before).

At the end of August this year I contracted GHSV type 1, or at the very least had my first ever OB. I had engaged in oral sex with my partner about a week to 10 days prior to the outbreak surfacing and since he is the only one I ever had oral sex with, I figured I contracted it from him. I have never had a cold sore, but he seems to think he has had a few in the past, though was unsure. I have heard that getting herpes type 1 on the genitals means it came from oral sex.

I was subsequently put onto Acyclovir which started working fast, and within about 3 days everything was cleared up, but by mid September, my stomach changed dramatically. It started burning with pretty much everything I ate. I figured it was gastritis so went onto PPI meds and altered my diet, but still had issues. I have had blood tests and my vitamins seem to be on the lower end (B12, D, Folate, Ferritin). I supplement with Hydroxo B12 and Folinic acid sublingual tablets right now and will be starting D soon too.

A couple months have passed and the burning is still somewhat there. I am now on Acyclovir twice daily for the next 3 months because I was getting prodrome symptoms every 3 to 4 weeks. I make sure to take the Acyclovir with food and try to drink enough water too. The thing is, I am so stumped by these GI issues. I already had a sensitive stomach thanks to metronidazole last year, but this seems to have tipped it over the edge. Now I cannot consume even lactose free products, which were fine before, and even vegetables like carrots can cause GI upset. I seem to do okay with carbs, chicken, fish and vegan or plant based butter. I cannot exercise as generally I feel so unwell. I have also noticed my skin is in worse condition with acne, cystic acne, and sometimes some sore patches around either side of my nose which come and go. My sleep is all over the place too and very broken.

I will say it has been one of the worst years of my life, with being made redundant Jan 15th, then developing stomach issues in March, Autism and ADHD diagnoses in April and May,, finishing my job in May (it was a long redundancy) followed by another job at the start of July which did not work out, then Landlord told us they are selling up at the end of July, found my hamster dead the next day, then contracted herpes in August. It has been a LOT. The stress does not stop as we now need to find a place to live and will be moving north by Easter. I am agoraphobic alongside having autism, ADHD and OCD so, it is a party in my head.

I know stress can do things to the body, but this feels like more than just stress. I am trying my best to manage stress, I take probiotics as recommended by my dietitian and I keep a diary of all symptoms, food, drink, meds etc.

I wanted to reach out today and see if anyone else has experienced GI issues, namely burning in the stomach that is not caused by acid reflux, and if anyone has improved or got any tips, I would appreciate hearing about it.
