New player, what do with LOB points?

I’m on day 4, less than an hour in, and I was looking at my LOB points before starting my next day and I was wondering. Should I just save up my LOB points? I’m doing fine with 3 employees right now, and I’m wondering if it’s worth it to save LOB points and then dumb them into one maxed out Nugget, or if quantity > quality in this game?
