Challenge: Talk me out of buying a Matsubara 240mm Shiro Gyuto

I sort of want to stress test my decision here. I have the following criteria for a buy and think this Matsubara is perfect. Please tell me if you think there are better options out there:

• Maximum edge potential - i wanna try shiro for this. Having not yet had one
• Reactive - i wanna give it some nice deliberate meat patina
• Tall heel to help with big hands
• Reasonably flat profile. I tend to push chop
• Sturdy enough to be a workhorse (cant use my Kobayashi for everything) but still a very strong performer. I dont want a wedgey knife ever again

Based on the above, tell me if you think there are even better options out there
