Parallel, Series or Both?

Im new to all this and looking for some help. My system is comprised of 8 panels (max i can fit) on the roof of a 24x8.5 enclosed trailer. The trailer is used for my mobile mechanic business. I currently have 2 12v 100ah Dumfume for 24v to my Sumry 3600w Hybrid inverter. I currently have the 8 panels in parellel, getting about 240v output. I'm second guessing myself and thinking I should have the panels 4P4S. I'm thinking I should want more amps rather than volts but I need at least 60v to kick on the charge controller. Any advise is greatly appreciated.
