Best vegan pizza cheese recipe for restaurant that is cheap to make?

I know a guy that has a vegetarian/ vegan pizza place, he said the vegetarian cheese sells about 70% more than the vegan

He uses potato cheese that his chef makes

He says he is looking to go full vegan, but needs something that tastes the same and is not too pricey

I think cashew cheese is better but those cost much more than potato

So looking for ideas

I told him to try the liquid miyokos but i think if he switched to that it would cut into profits too much
