What are the best espresso beans for a creamy latte?

I recently got a new coffee machine to save money and i'm starting to get into coffee beans for my lattes. I ordered medium roast beans from Partners coffee and the flavor was caramel, apple, and pecan I think. It was a pink bag. I used it on my latte but i feel as if it had a little bit too much acidity for my liking. I've been to several cafes and theres only a few that i've tried where just the espresso and milk taste so creamy and amazing. I didn't find this to be the case when i tried my beans, not sure if it has to do with the roast. :( it was good but i need tips on how to achieve the perfect creamy latte with the perfect beans.
