Help, what gpu should I get for my first build?

So I'm most likely getting a 5080 for my first pc build now in December and this is all the components I have so far: •Asus proart pa602 wood tg •Amd ryzen 9 9950x3d •Asus rog crosshair x870e hero •Noctua nh-d15 g2 chromax.black •Phanteks amp gh 1200w platinum black atx 3.1 •Kingston fury beast 64gb (2×32) cl32 6400 Mhz •Kingston fury renegade g5 4096gb PCIe 5.0 m.2 nvme •3 corsair icue link fans

I'm mostly going to game on the system but I also want to be able to do some video editing and music production and wondering if the 5080 will be good enough or if I should wait until January and get a 5090 but since I don't know when gpu prices will go up due to ram shortage I'm feeling like it's better to get a gpu sooner then later and settle for the 5080.
