Cooking recs for picky eaters/people with food restrictions?

I recently moved back in with my family to help out (parents are getting older and all that) and have picked up kitchen duty for dinners. I'm kind of at a loss at what to make as they have health restrictions for what they can eat and are also somewhat picky about likes and dislikes which effectively eliminates 90% of the foods I would regularly make for myself.

Food needs to have minimal red meat, avoid excessive frying or grease and not have nuts. Also spices are okay but *spicy* is not because of history of stomach ulcers. Looking for healthy flavorful food suggestions.

Thanks for any ideas!
