How to keep track of everything

Hi all,

Recently got back into Minecraft, after not playing for many years.
My goal is to get to the moon, but I am having trouble keeping track of everything. There are so many different items and different ways to create things.
Even following the quests I am feeling a tad overwhelmed.
Will things get "easier" in the sense of confusion?

I have no problem grinding it out, if things get easier once I get better machinery
