Considering starting a mic

I’m a huge comedy fan and I am a partner in a brewery in a major US city and I’m considering hosting a regular stand up comedy nights. I’d prefer to steer clear of the open mic format and book local comedians for regular mic time.

What would be appropriate compensation for up and coming comedians? I’ve talked to some and have heard all they get at other places for a 5-15 min spot is a couple of drink tickets up to $25 until you’ve made more of a name for yourself.

I’d like to set my shows apart by treating them better so as to draw more comics and eventually bigger names. What are your thoughts?
