How should I choose between mirrorless cameras like Sony, Canon, Fujifilm, etc.?

I’m getting into photography with a Canon EOS 1200D, but now I’m considering upgrading to a used mirrorless camera with a budget between $700 and $1,000. I’m not sure how to choose between Nikon, Canon, Sony, and other brands, especially when it comes to color science (I keep seeing reels that promote Fujifilm for its color rendering). For example, I found a Sony Alpha a7 II with two kit lenses for about $600 — what do you think?
