It seems there re always plenty of empty seats from US to Tokyo. In that case, do you guys still pay extra to purchase seat in advance?

From what I saw in November , the flight from IAH to NRT is almost empty with lots of seats/rows available. Is it because it’s not busy season? We can just switch to the empty seats once flight take off?
