Towing and powering a food stand.

I have a 2024 EV6 GTLine AWD. I want to set up a stand at farmer's markets and power it with the car. As far as cargo, I think I may need more room than what the interior offers and wanted to tow a small enclosed trailer. Thinking something like THIS. It's a 4x8 trailer with a dry weight of 850 lbs and 1600 max load capacity. Does anyone have any experience with this? Anyone else have any thoughts on feasability? I know distance and weight will determine how far I can go and how long I can use the car as my power source. Thanks in advance for any input!!!
