I need a one serving soup idea, details within
Hey folks, I love soup (obviously), and I don’t make it too often because I live alone, and when I make something that has multiple servings, I’ll eat leftovers in my sleep. I know it’s bizarre and I’ve been in therapy for this for years and it’s working on it, but I was on a med that caused it and it stayed with me.
Anyway, that being said, every time I make a meal, I cannot have leftovers.
I am looking for ideas for quick and easy one serving (like a litre worth) of soup. I also have a substantial chronic illness that not only makes meal prep difficult but also limits what I can eat.
I also have to watch my calories so I wouldn’t want it to be over 800 or so calories max.
I cannot have any gluten (but that’s easy to make subs for… I have celiac disease), dairy as it gives me hives (so no cream), and too much fibre at once (so like nothing too bean heavy, or mostly vegetable).
I also can’t eat shellfish, beef, and I’m probably missing some things but I am good at adapting.
I know this is a big ask! But I am sure some of you out there might make single serving soup dinners here and there.
I don’t need recipes, just ideas to piece something together because I am craving and missing soup so much.
Thank you!
