Restaurant recommendations in Madrid

Hi, I will be going to Madrid on the valentines day week for work. Given the date, I imagine it would be very busy so I started looking into it now. I love Tapas and Wine and found these three restaurants to book on the valentine day (didnt check yet if they accept booking). I want it to be:

• delicious, good food good drinks
• easy environment (not super loud or packed with people standing everywhere and low lighting)
• not a tourist spot ie locals also go there, locals work there rather than some international owners.
• I’m vegetarian but my partner is not. So I want a restaurant thats not fully meat heavy.

What do you guys think of these three restaurants? Does anyone else have any other recommendations?

Also I will be in Barcelona the week before. Any recommendation for there also be very appreciated, although I planned that bit pretty much.
