Those of you who crocheted your wedding florals: how did you execute that??

I'm considering making all of my wedding florals (my bouquet, my fiancé's boutteniere, centerpieces) but I don't know how to start! I'm not experienced in arranging bouquets and wondered how other people started their process. I'm able to start super early (we're getting married in 2.5 years) but would love any thoughts on timeline and whether all that work is worth it :)
