How difficult is this game? Is there still value in playing on lower difficulties?

My GF isn’t the best gamer but i have been looking for good coop games to play with her. Does this game still allow you to progress when playing at low difficulties or is this a game where all the value and progression comes from pushing harder and harder levels?
