Spring Salad - Edible Sunshine in a Bowl!

This salad is pure happiness on a plate! I started making this when I was desperately craving something fresh and colorful after a long winter, and now it's my go-to whenever I need a mood boost or want to impress guests without spending hours in the kitchen.

The dressing is what makes this special - it's like liquid sunshine. Orange juice and zest give it this bright, citrusy base, then honey adds sweetness, Dijon mustard brings depth, and a touch of olive oil makes everything smooth. The combination sounds fancy but takes literally 2 minutes to whisk together.

I use watercress as the base because it has this peppery bite that plays beautifully with the sweet orange dressing, but you could substitute arugula or even baby spinach if that's what you have. The real show-stoppers are the toppings though - cubed mango for tropical sweetness, colorful bell peppers for crunch, paper-thin red onion slices for bite.

The baby carrots and beets add earthiness and gorgeous color (I use the pre-cooked beets from the produce section to save time). Pumpkin seeds give it texture and a nutty flavor, while feta adds that creamy, salty element that makes you want to keep eating.

Fresh herbs are non-negotiable here - cilantro and parsley make everything taste alive and fresh. Don't skip them or use dried versions.

This salad is Instagram-ready but also genuinely delicious and surprisingly filling. Perfect for lunch, as a starter for dinner parties, or when you want to eat something that makes you feel virtuous and satisfied at the same time.
