So how does Kyurem Black and White work?

This is my first playthrough of the sequels. When kyurem fuses and defuses, are they treated as separate pokemon? Or does it use Kyurem as a base? Asking because I want to start EV training but dont know if the EV’s carry over after fusion. And how do their move sets work?
