Why isn't late night shopping every night a thing? Or on Saturday night?

In most other countries shopping centres/malls and many shops open until 9-10pm or even later every day. Yet in Australia, its usually still until 5-6 except for 1 or 2 nights a week (usually Thursday and Friday) where its later. In WA it was just Thursday, in Vic Thursday and Friday too. Yes, some things open later, but it just seems odd to me why that's not every day. Especially Saturday night when many people are out anyway, many just people eating, shopping with family etc, not going out to bars, clubs etc. I'm not saying I'm a big fan of consumerism in general, but as someone who struggled to find even a retail job I'd love to work later shifts.
