Confession time - Minsc and Boo

I currently have 3 whole playthrough of the game and I keep, like everybody else, discovering new details. That being said, I have never in met or encountered Minsc and Boo once in all of my playthroughs and only discovered recently they are recruitable companions? I want my first meet with them to be organic, but at the same time I think that there's clearly something I'm blatantly missing. Can anybody help with hints or directions without making it too obvious where and how to meet them?
