What can I do with pulped ginger fiber?
I made a big mason jar of ginger ale syrup/bug, now I'm left with a container of ginger fibrous pulp.
Recipe was ginger, water, sugar, lemon juice. Simmer until reduced. Take all of it and then blend with water as needed. Double filter the syrup, then re-blend the pulp with water. Repeat twice to squeeze out as much ginger flavor as possible. Result from 4 stalks is a 1 tall mason jar of ginger bug for soda. It does taste good and seasoned to my liking.
Now I have all this pulp that I don't know what to do with. Can I form it into balls or discs and make candied ginger still? It's still very ginger-y, but dense and moist. I could throw some into cookie recipes or snack on it by the spoonful when I need a kick.
