Help with Pruning Fruit Trees

Hi, new gardener here,

I have an apple, peach, and some citrus trees that have grown beyond reach. I want to prune them to clean it up and make it more manageable and accessible, but don’t quite know where to start. The only thing I know is that it’s best to prune during winter (or towards the end of winter). Any general advice for it?
