Going to a Community College outside of California

Hello I am currently a freshman in a CC in the middle of Mississippi, I went to CC because of the cost and of all the stories I hear of people transfering into dream schools after completing two years. I am majoring in Mechanical Engineering with hopes of being able to transfer to UT Austin in Texas, but as I scroll through the subreddit I really only see people having these amazing success stories coming out of texas and california community college students. So my question is as a student going to a CC in Mississippi is it possible to transfer to UT austin or any other school out of state thats pretty popular. Im a first generation student and I have had to learn the college process by myself and im still confused in some parts of it, so sorry if this sounds dumb. Also drop some other schools that would good to apply too as a Mechanical Engineering major. If going out of state is unrealistic I plan to just go to Mississippi State University.
